It’s that time of the month, the PinAddicts Pinterest Challenge. The idea is to choose something from your Pinterest boards to create and link up each month. It’s not every day that I receive an email asking if I would love to review cake, I wish it happened more frequently. However, the lovely people at Baker Days invited me to try out their personalised cakes, for any occasion, which fit through your letter box. I’m quite looking forward to Wimbledon starting next week as for me that’s when summer starts. I was thinking how nice it would be to have some summery cupcakes to eat whilst watching the tennis and came up with these. Easy Wimbledon cupcakes For the cupcakes I tried Dr Oetker’s Shake it! A post dedicated to the beautiful battenberg? Yes. I love battenberg, it reminds me of afternoon tea at my grandmother’s house when I was young. Beautiful battenberg I thought I would make one for the Jubilee weekend although I chickened out of adding an iced union flag to the top of it! There’s a great sweet shop in Covent Garden which sells all kids of American sweets. On my last visit I bought some packs of popping candy thinking they would be great as a cupcake topping! I made some simple cupcakes using the vanilla recipe from the Hummingbird Bakery cookbook. I then made a buttercream to which I added a few drops of vanilla essence. I put a dollop of the buttercream on each cupcake and sprinkled popping candy on top. I’ve been having a bit of a bake-fest lately. The Jubilee has been inspiring me in lots of ways – sewing, baking, and even a letter to the Queen! Our holiday coincides with the Jubilee weekend so I’ve been making some treats we can all enjoy to get us in the mood.
