Easy Platinum Jubilee gingerbread crowns

I’m not sure how we will celebrate the Queen’s Platinum Jubilee this year. We want to do something but we’re not sure what. Hopefully our village or street will be doing something special to celebrate.

Even if we are only celebrating at home we will need special Platinum Jubilee treats and we tried out an idea for special Platinum Jubilee gingerbread crowns. We love baking gingerbread and these special iced crowns would make a delicious treats for kids and adults at any afternoon tea.

Easy Platinum Jubilee gingerbread crowns

We used our favourite gingerbread recipe but you could easily use a packet mix to whip up a tasty gingerbread dough. We chilled our dough in the oven for 30 minutes before rolling it out.  Then we used a crown shaped cutter to cut out our gingerbread crowns. If you don’t have a crown shaped cookie cutter you can make your own template. Just draw a crown on a piece of card, cut out the card and carefully place it on your dough and cut round it.

We squeezed six gingerbread crowns from our dough as the cookie cutter was quite large. We baked the gingerbread crowns according to the instructions.

When they were baked we removed them from the oven and placed them on a rack to cool. We made some icing (and meant to addd food colouring but forgot!), and poured it into a piping bag.

Then we snipped the end off the bag and got decorating. We raided the cupboard for anything we could find and came up with sprinkles and sweets to decorate.

My daughter loves decorating biscuits and enjoyed icing and decorating each biscuit. The sweets looked like jewels!
