The clocks springing forward have given us a much needed boost. The days are so much longer and we love having more daylight to do things after school.

Cadbury mini eggs

50g cashew nuts

200g dark chocolate

200g milk chocolate

100g unsalted butter

50g golden syrup

150g Rich Tea biscuits

What is tiffin?

Tiffin is a simple chocolate fridge cake that doesn’t need baking. It’s a really easy treat to make with kids and you can use whatever ingredients you have at hand. Swap the cashews for seeds or different nuts, really anything goes.

Classic tiffin is really easy to make with a little preparation. Our Easter chocolate tiffin includes delicious Cadbury mini eggs which are always popular in our house.

Before you start you will need to prepare the ingredients. Place the nuts on a baking tray and bake in the oven for about 10 minutes. Break the chocolate into pieces and place in a bowl, break the Rich Tea biscuits into small pieces and set aside.

Place the mini eggs in a bag and crush with a rolling pin.

Set the bowl containing the chocolate over a saucepan of boiling water. Add the golden syrup and butter and stir until melted. Remove from the heat and mix in the broken biscuits and nuts.

Stir in about half of the crushed mini eggs and spoon the mixture into a lined baking tray. Sprinkle the remainder of the crushed mini eggs over the mixture.

Leave the mixture to harden for a few hours (place in the fridge for an hour if in a hurry). Cut into 16 pieces and enjoy!
