I bake a lot of cakes with my children but recently we tried something different – jam tarts. I wanted to make it as easy as possible so used ready made short crust pastry.
Time to make: 1 hour
Equipment needed to make flower shaped jam tarts:
Short crust pastry (but you can make your own if you prefer)
Jam or lemon curd
Flower shaped cookie cutter
Mini tart tin (each hole measures 4×2 cm)
First roll out your pastry until it is about 3mm thick. Lightly flour your cutter and cut out as many shapes as you can from the pastry.
We used this child-friendly cookie cutter cube which features 6 different shapes including a flower.
We carefully lifted off the pastry flowers and pressed them into a well greased tin, and gently pricked the bottom of each flower with a fork.
We baked our little pastry flowers for 5 minutes at 180°C then filled them with a teaspoon of our favourite jam (for us) and lemon curd (for Daddy). We put them back in the oven for 5 minutes at 180°C. We left them to cool before transferring them to a wire rack. The jam gets really hot so you do need to let them cool down properly.
Try and eat a few whilst they are warm though because they are delicious! We took a few of ours outside and enjoyed them whilst sitting in the shade of our cherry tree. They both enjoyed making them but I think they had even more fun eating them!
