Daffodil biscuits for spring

The sun is shining so I thought I would make some daffodil inspired biscuits.

I baked simple biscuits using a gingerbread kit from Morrisons. The kit contains a gingerbread mix with a cutter, a tube of white icing, a sachet of golden syrup and raisins, so all you need to provide is butter and 2tsp of water. The mix made a satisfying dough which came together really easily and smelled lovely. The golden syrup made it quite sticky so I used plenty of flour when rolling out the dough.

Morrisons gingerbread kitInstead of using the enclosed cutter I found a star-shaped cutter from my stash and cut the biscuits out. According to the packet the dough should make 6 gingerbread men and I managed to squeeze 12 stars out by rolling out the remaining dough. I put the biscuits on a lined baking tray and baked at 190° for 10 minutes after which time the dough was smelling delicious and a lovely golden colour.

The ingredients of the mix are wheat flour, light brown soft sugar, dried whole egg, ginger powder and raising agent. With the butter and golden syrup this is pretty much how I bake my gingerbread which explains why the biscuits are so tasty!

While the biscuits were cooling I made the decoration using marzipan which I coloured with Sugarflair Tangerine and Sugarflair Melon for the leaves and central bell. I use the star shape for the leaves and a circular cutter and when the biscuits were cool I added the marzipan – simple daffodil biscuits for spring.
