As well as being a firm favourite in lunch boxes and after school, did you know that Pink Lady® apples make the perfect filling for pancakes this Pancake Day? We’re all about embracing the seasons here at the gingerbread house blog and were delighted to receive a Pink Lady® Pancake Day kit to get a head start.

I just love pancakes all year round although we try to make them extra special for Pancake Day. Today I wanted to share a delicious recipe for apple pancakes. Did you know that Pink Lady® apples are packed with goodness – they are a natural source of energy and a single apple supplies a quarter of your day’s vitamin C?

For our apple pancakes we used PinKids® apples, these have been specially selected from the Pink Lady® harvest for their slightly smaller size, making them suitable for smaller mouths. PinKids® has all the taste of its big sister, Pink Lady®: a characteristic colour, crunchy texture and wonderful fizz.

Apple pancake recipe {with Pink Lady® apples}

We cheated and used a ready made pancake mix but all you need to make your own pancakes are: 100g plain flour, 2 eggs, 200ml milk and 2 Pink Lady® apples.

First wash, core and roughly chop your apples. Then blitz them in a food processor, along with the milk.

In a separate bowl whisk the eggs and flour, and gradually add in the apple mixture until you have a lovely smooth consistency.

Heat a small amount of butter in a small frying pan, pour in your mixture (we use a soup ladle to get the right quantity) and fry for about one minute on both sides. We used an apple shaped frying pan but you could always use an apple shaped cookie cutter to cut shapes from your pancake.

We added a sprinkle of freeze dried Raspberry powder over a Pink Lady® stencil, and served them with sliced Pink Lady® apples for a delicious and healthy breakfast.

Pink Lady® apple pancakes

Apple pancakes don’t take much more time to make than plain pancakes. However they are really worth the effort as the apple gives them a wonderful flavour. Pink Lady® apples are the first to blossom and the last to be harvested. This extra time in the sun gives the apples their special blush and a sweeter crunch.

    I never knew you could make apple pancakes! How yummy! Also I love that you can buy smaller apples for children! How cool is that. I often buy children’s sized apples x
