I’ve completely fallen in love with my little copy of Gingerbread Wonderland by Mima Sinclair. It’s packed full of inspiration, recipes and ideas for some amazing gingerbread treats.
I love the recipe for Light Gingerbread Dough and used it successfully to make our gingerbread Snowman and Snowdog biscuits a couple of week ago. The children really wanted to bake this weekend so we used the recipe to make some gingerbread iron golem biscuits. Both my children love Minecraft so this was a fun activity for them.
Gingerbread Iron Golem biscuits
We followed the Light Gingerbread Dough recipe from Gingerbread Wonderland by Mima Sinclair.

We chilled the dough for an hour before rolling it out.

I used an image in one of my sons’ book, enlarged it to about 5 cm high and used it as a template to cut out my shapes. It wasn’t the easiest shape to cut but we made a few then popped them in the freezer for 5 minutes before baking them for 7 minutes. They didn’t spread at all whilst baking and we soon had delicious looking gingerbread biscuits.

I iced around the edges and they were ready to eat. What do you think?!
