Hungry to happy in a couple of easy steps

I love trying to make meal times exciting for my children. Too often the toddler shouts “I’m hungry” at me, giving me a very small time frame to whip up something tasty for him.

I’ve just been introduced to the new Richmond Mini Meatballs and they are perfect for quick and easy meals. There are lots of ways you can use them, such as traditional meatballs and spaghetti, but we like them as kebabs!

Last night, after a long day shopping, it was very hot and sticky so the children had a bath before dinner. As usual I needed to prepare a meal really quickly so I made kebabs with rice using Richmond Mini Meatballs. The meatballs were easy to cook in the oven alongside a red pepper. I served them on wooden skewers with rice.

The toddler really enjoyed them and I was happy I was able to prepare a meal in just 8 minutes. My husband and I finished off the meatballs with a delicious home-made tomato sauce and pasta for our dinner.
