It’s been a while since I’ve put together a fun bento lunchbox. However this weekend we planned a fun day out and I wanted to make the children a special lunch. We’re all excited about the new new Minions film and I thought this would make a brilliant theme for lunch. So today I’m sharing our Minion bento.
Sweetcorn fritter
The main component to our Minion bento was a yummy sweetcorn fritter. Sweetcorn fritter is a family favourite and I often make a few for dinner but they are just as good cold. I made ours with Green Giant sweetcorn. This summer they have teamed up with Universal Studios to celebrate the launch of the brand new Minions movie so make sure you look out for the special packets in store now.
Sweetcorn fritters are really easy to make if you fancy trying them yourselves. You will need:
- 100g plain flour
- 1tsp baking powder
- salt and pepper
- 1 egg
- 150ml skimmed milk
- 198g can Green Giant sweetcorn
This makes 6 fritters and take about 10 minutes so are really quick and simple. First drain and blot the sweetcorn on paper towels or a tea towel. Then mix the dry ingredients in a bowl, and add the egg and milk. Whisk together then add the sweetcorn.
Heat a pan and pour in two portions of the mixture. Cook over a moderate heat until they start to turn brown. Flip over and cook the other side until cooked through.
Minion bento lunch:
When I sat down and thought about what I wanted to include in our Minion bento several ideas sprang to mind. Like bananas. I even stocked up on them at the supermarket but when it came down to it they just didn’t fit.
Instead I packed in the sweetcorn fritter cut into two with a little pot of mayonnaise. There was a Babybel, cucumber slices cut into flowers, and baby tomatoes. I also managed to find some Minion crisps.
For a sweet treat there were a selection of Minion biscuits, one handmade.
There was one of the new banana flavoured Minion yoghurts
A pretty colourful and healthy lunch, and one which my children really enjoyed. In fact I may be making another *despicable* Minion bento when we go to see the film at the cinema. Excited!
