How do you like your pancakes? {Hob Pride Pancake Challenge}

I love the first few months of the new year. There is so much going on with birthdays and special days that it’s difficult to be bored for a minute.

Next week we will be celebrating Pancake Day here in the UK. My husband *always* makes the pancakes in our house so I have been practising so I can make them for a change. Everyone seems to like them served a different way but we’re all agreed that flat pancakes are the way forward.

How do you like your pancakes?

A basic pancakes recipe is cheap and cheerful, it’s what you serve them with that makes them really special. My basic pancake recipe is:
100g plain flour
2 large eggs
300ml milk
melted butter to fry the pancakes

Pancakes are quick and easy to make. This is our tried and tested family method:

  • Mix the flour, eggs and milk in a large bowl and whisk, whisk, whisk! Chill in the fridge for 30 minutes (I’m not sure what this does to the batter but it’s something we’ve always done).
  • Pour some of the melted butter in a frying pan and swirl it around until the base is covered. Remove any excess with a piece of kitchen towel.
  • Use a soup ladle to pour the pancake batter into the frying pan. Cover the bottom of the pan with batter and cook for a couple of minutes then flip it over and cook the other side until it’s golden brown.

We always have these ingredients at home so pancakes are quite often a real weekend treat. My husband loves them the old-fashioned way with a squeeze of fresh lemon and a sprinkling of caster sugar.

How do you like your pancakes?

My children are the complete opposite. If you can imagine it on a pancake they will try it and have been known to enjoy theirs with cream, marshmallows and colourful sprinkles.

In an attempt to be healthier I always make sure there is plenty of fresh fruit about and these often make their way to their pancakes too. Berries are always a popular choice so I usually whip up some strawberry and raspberry pancakes. Just crush some berries using the back of a fork and add to the pancake mix. They give the pancakes a lovely pink colour as well as lots of flavour.

The only other kitchen essential is my Hob Pride Hob Cleaner, by the makers of the award winning Oven Pride. Seriously! If my husband is cooking I’m left with the cleaning up and he makes the most phenomenal mess when he’s flipping those pancakes… Our new hob, and the whole kitchen, is only four months old and it’s the cleanest, tidiest room in the house. Everywhere else is a total mess but the hob looks amazing, but only thanks to Hob Pride and a little elbow grease.

My son is itching to be old enough to flip pancakes like his Dad, but I’ve told him he has to wait until he’s a little older before he can have a go. I’d love to know who does the flipping in your house, and have there ever been any disasters you can share?!
