To me Summer means warm weather, days spent at the Lido and a homemade picnic. The weather has been a little unsettled recently but we made the most of a decent day at the weekend and headed out for a picnic. As well as sandwiches and savoury snacks we took some homemade lemon cupcakes which were the perfect sweet treat.
I love to bake with my children and it’s always fun to try a new recipe. I used a lemon curd cupcake recipe I found on the Flora website which was a standard cupcake recipe, using lemon curd to flavour them. We love lemon curd and this is a simple way to add a little flavour of Summer.
Ingredients to make lemon curd cupcakes:
115 g (4 oz) Flora Buttery
115 g (4 oz) caster sugar
2 eggs, medium
115 g (4 oz) self-raising flour
2 tablespoons lemon curd
How to make easy lemon curd cupcakes:
My daughter helped me measure out the ingredients, pour them into a mixing bowl, then mix everything together by hand. I love a straightforward cupcake recipe and this couldn’t be easier. Using Flora Buttery means this is a really accessible recipe for children as you can mix the ingredients by hand.
We placed a spoonful of mixture in our cupcake cases and baked them at 180° for 20 minutes. My 3 year old was very happy to lick the bowl and spoon!
For the icing:
55 g (2 oz) Flora Buttery
225 g icing sugar, sieved
1 tablespoon lemon curd plus a little milk
yellow food colouring
Whilst the cupcakes were cooling down we made the icing. We adapted it slightly as we don’t like coconut. We whipped up the butter cream icing, again, the addition of the Flora Buttery meant the children could do this step. We added more of the lemon curd to give it some flavour and a dash of food colouring to reinforce the yellow colour.
The original recipe made sweet little Easter chicks but I’m a seasonal girl and can’t be making things in the wrong season, it just doesn’t feel right to think about Easter when the days are long and warm 🙂 Instead we gave our cupcakes a kawaii feel with chocolate strands, chocolate and white buttons and mini chocolate drops to decorate the butter cream.
The faces are pretty nondescript but my 5 year old made a Miffy face and we went for bears and cuteness – in the eyes of children, anyway!
Cakes never last long in our house and the combination of the lemon smell and flavour make these a perfect choice. The recipe makes 10 generous cupcakes and is quick and simple, especially if you have children who want to get involved.
