Banana muffins – not for toddlers!

I made a delicious batch of banana muffins yesterday with some help from my toddler. Trying to be frugal with the food shopping I had stupidly let a bunch of bananas go too ripe and couldn’t throw them away.

Banana muffins are really simple so here’s my recipe. You will need:

  • 225g unsalted butter
  • 225g caster sugar
  • 225g self-raising flour
  • 4 eggs
  • 1/4 tsp nutmeg
  • 2 mashed ripe bananas

Heat the oven to 180 degrees. Mix the butter, sugar, flour, eggs and nutmeg together then add the mashed bananas and mix well. Spoon the mixture into your muffin cases and bake in the oven for 20 minutes. Leave to cool down on a rack.

Now I have to be honest and say that we had loads of fun mashing the bananas and baking them BUT they had a very strange effect on the toddler. As you can see from the ingredients they contain a lot of sugar and they just sent him over the edge! So, a delicious recipe but I wouldn’t give them to your child unless you can run them ragged in the park for a couple of hours!

Oh, and no pictures because they were so delicious they’ve all gone <slaps wrist>!

    My daughter LOVES banana bread.

    We love banana bread, and I have a great recipe for fat free banana bread. I really should check how much sugar is in them though eek!
