One of my favourite things about Christmas is the food. Baking is one of my favourite things and I enjoy trying festive dishes. We all enjoy mincepies but last year we were left with a lot of mincemeat. We used some in Mincemeat Palmiers which were lovely and simple to bake and tasted delicious, as well as a delicious Mincemeat and Marzipan loaf. It made me realise that you don’t need to use mincemeat in mincepies, you can enjoy it in lots of other ways. Today I wanted to share our recipe for Apple and Mincemeat Crumble which is a delicious way to enjoy leftover mincemeat.
Apple and Mincemeat crumble ingredients:
1kg cooking apples
200g mincemeat
150g plain flour
75g butter
50g demerara sugar
50g marzipan
Custard to serve
How to make Apple and Mincemeat crumble
Peel and core the cooking apples. We have a freezer full of apples from friends, these are already peeled, cored, sliced and have been blanched for a few minutes. I took these out to defrost them the night before I made the crumble. I weighed the mincemeat and mixed it into the sliced apple, setting it to one side.
I placed the flour and butter in a mixing bowl and mixed them until I had fine breadcrumbs. Then I stirred in the demerara sugar.
I placed the apple and mincemeat mixture into a dish and sprinkled the crumble mixture over it. I made one larger dish and some individual portions too. I placed them in the over and baked them for 20 minutes at 180°. Then I grated the marzipan and sprinkled this over the crumble. I placed it back in the oven for 15 minutes.
The marizpan melts ever so slightly and adds a really gorgeous flavour to the apple and mincemeat. You can serve the Apple and Mincemeat Crumble with custard or ice-cream.
This is a lovely way to use up any mincemeat at Christmas but also makes a lovely alternative to a fruit crumble too.
