Halloween gingerbread ghosts

We’ve had a steady stream of visitors recently so thought we should give our baking a seasonal twist. We love gingerbread so made our favourite gingerbread biscuit recipe and used a great Halloween cutter to make Halloween gingerbread ghosts.

Ingredients for Halloween gingerbread ghosts:

350g Plain flour
1tsp Bicarbonate of soda
2 tsp Ground ginger
100g Butter
175g Light muscovado sugar
4 tbsp Golden Syrup
1 large egg

How to make Halloween gingerbread ghosts:

Place the flour, bicarbonate of soda and ginger in a bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs, then stir in the sugar.

Add the golden syrup and beaten egg to form a smooth dough, kneading lightly with your hands towards the end.

If you have time you can wrap the dough in clingfilm and leave to rest in the fridge for 30 minutes.

Preheat the oven to 190°/Gas 5 and line a couple of baking trays with greaseproof paper. Roll out your dough until it is a couple of mm thick and cut your shapes. We used a Halloween ghost shaped cutter.

We cooked them for 12 minutes then let them cool down before transferring them to a wire rack. We decorated them really simply, I drew around the edge of each ghost with white icing, my 3 year old added spooky eyes.
