1.5 Syn gingerbread biscuits {Slimming World recipe}

I’ve mentioned a few times that I’ve been following Slimming World for a while now. I had a massive blip over the Christmas period but I’m pleased to say that I’m now back on track 🙂 I find Slimming World pretty easy to follow but the one thing I miss is baking. I love baking and although I can syn all my sweet treats, I just find that this is something that doesn’t sit so well when you’re following a weight management programme!

One of the recent magazines included a recipe for gingerbread stars which I never got round to making. So I thought I would make some gingerbread hearts, which are only 1.5 Syns per biscuit, as an early Valentine’s Day treat.

1.5 Syn gingerbread biscuits {Slimming World recipe}

Ingredients list for gingerbread biscuits:

200g plain flour
4tsp ground ginger
1/4tsp ground cloves
1/2tsp ground fennel
1/2tsp cinnamon
1 level tsp bicarbonate of soda
60g low fat spread
4 level tbsp sweetener
2 small eggs
1 level tbsp  icing sugar

How to make 1.5 Syn gingerbread biscuits:

In a bowl mix the plain flour, spices and bicarbonate of soda together. I couldn’t find ground fennel anywhere so I left this ingredient out.

Rub in the low fat spread until you have fine breadcrumbs. Add the sweetener.

Beat the eggs and add them to the dry mixture to make a dough. Knead until you have a lovely smooth dough.

Roll your dough and cut hearts (or whatever shapes you want to make). I wanted to hang my heart biscuits so used a skewer to make a small hole at the top of each biscuit.

Bake on a lined baking tray for 10-15 minutes at 180°C. Remove from the oven and leave to cool on a baking tray. Sprinkle with icing sugar if you wish.

My gingerbread hearts turned out quite chunky, I think I may have been a bit heavy-handed with the bicarb! Despite missing out the ground fennel the biscuits have a very strong smell and taste but lack a bit of crunch that you get from a traditional gingerbread biscuit. At only 1.5 Syns per biscuit this is a great alternative to my favourite biscuit.
