Easy ice cream cone cupcakes

When we were gripped by the horrible heatwave I really didn’t feel like baking. However, now it’s a little cooler I have been very happy to get back in my kitchen and bake! This morning I had a good look through my favourite baking recipes and decided to make ice cream cone cupcakes.

We’ve been eating plenty of ice creams so I used left over cones, flat-bottomed for ease of baking 🙂

I whipped up some cake mixture using my favourite vanilla cupcake recipe and had lots of help from my two little helpers. We then added an equal amount to each cone before the mixing bowl was taken away to be cleaned by hand!

I baked the cupcakes for 15 minutes and while they cooled made some vanilla flavoured buttercream. Then I added a swirl of buttercream, a flake and some sprinkles to make them look like proper ice creams. My children weren’t fooled but they really enjoyed eating them.

Best of all, it didn’t matter when Little Sis ate the bottom of her cone first!

These were fun to make and you could easily add food colouring to the buttercream and decorate them with all kinds of colourful sprinkles and decorations. Yum!
