Banana bread recipe

It’s been a while since I baked something, well, at least a week. I can’t bear to let a cake tin go empty! I thought I would make something delicious and healthy as Edward enjoys the odd slice of cake too.

Ingredients:

  • 175g self-raising flour
  • 1/2 tsp baking powder
  • 150g caster sugar
  • 3 eggs
  • 3 ripe bananas
  • 4 tbsp olive oil
  • 1 tsp vanilla extract

Method:

Preheat over to 180°C/160°C fan/gas 4 and grease and line a loaf tin

Combine the flour, baking powder and sugar together in a large bowl. Beat the remaining ingredients in another bowl.

Stir the egg mixture into the dry ingredients. Pour the mixture into the loaf tin and bake for 1 hour.

Remove from the oven and leave to cool in the tin for 10 minutes before removing from the tin and leaving to cool completely on a wire rack.

Slice and enjoy!

    when I make banana bread it is always a bit dry, so I’m thinking the olive oil in this recipe will help make it more moist. Will have to try it out soon.
