Banana muffins for little ones

Edward loves his finger food but unfortunately doesn’t like fruit unless it’s pureed. However I’ve found a way of making sure he gets banana by hiding them in muffins! This is a really simple recipe which takes 30 minutes from preparation to eating.

Ingredients:

55g unsalted butter

100g caster sugar

1 egg

2 ripe bananas

1/2tsp natural vanilla extract

125g plain flour

1 tsp baking powder

1/4tsp bicarbonate of soda

 

Method:

Preheat oven to 180Oc and line your cake tin. I use a mini muffin tin for bitesize muffins but you could make these adult sized too.

Beat the butter and sugar, then add the egg and vanilla. Mash the bananas and add them in.

Sift in the flour, baking powder and bicarbonate of soda.

Spoon a dollop of the mixture into each cake case and bake for 14 minutes until firm to the touch. Leave to cool before transferring to a wire rack and eat. These keep for 4 days if stored in an airtight container.
