I love to bake and was delighted to receive a copy of the National Trust Book of Biscuits by Linda Collister to review. As a fan of National Trust tearooms, I thought the book would be a great addition to our collection of baking books.

This tempting collection of recipes from expert baker Linda Collister includes all the classics. The book is divided into chapters, starting with Good Things to Know, and working through Nice and Easy, All About Chocolate, Something Fancy, Squares and Bars, Biscotti and Savoury.

There are ginger snaps and shortbread petticoat tails, deluxe chocolate chip cookies, Florentines and macarons, tiffin and flapjacks, as well as biscotti and savoury biscuits. And if you’re looking for something a little different, how about Chocolate, Sour Cherry and Pistachio Cookies? Sea Salt Praline Biscotti? Or Black Olive Palmiers? There’s a biscuit for every occasion.

This beautifully illustrated book contains a generous side serving of history and is full of delicious tried-and-tested recipes that you’ll want to make again and again.

There were a couple of recipes I bookmarked for later, such as the Double Chocolate Twist but I actually made the gingerbread biscuits first. We bake a lot of gingerbread so I’m always happy to try out a new recipe.

The dough came together well and I let it rest before rolling it out. I used a flower cutter to make gingerbread flowers. They tasted delicious, with a soft gingery bite. They made a great afternoon treat for the teens and I can’t wait to try more recipes.

If you’re a fan of gingerbread then you are in luck, as well as gingerbread people there are also recipes for brandy snaps, Cornish fairings, Cragside Crackles, ginger shortbread, Grasmere ginger shortbread, lebkuchen, old-fashioned double ginger snaps and tiffin.
