There’s something about this time of year that makes me want to make good food for the family. Today I wanted to share my recipe for Sweet potato and tuna fish cakes. It’s a simple recipe, quick if you use left-overs (which I’m a big fan of doing) and a great use of store cupboard essentials, such as canned fish which is really convenient for family mealtimes.
Ingredients to make Sweet potato and tuna fish cakes:
2 medium sweet potatoes peeled and cubed
Princes tuna chunks in brine
lemon juice
black pepper
vegetable oil
Two slices of bread or breadcrumbs
bunch of spring onions
How to make Sweet potato and tuna fish cakes:
Boil the sweet potato for 10 minutes or until tender, drain and mash. Set aside to cool.
Whizz two slices of bread in a food processor until you have fine breadcrumbs.
Drain the tuna and place in a mixing bowl with the spring onion, lemon juice and pepper. Mix well and add the mashed sweet potato.
Divide the fish cake mixture into six small balls and gently flatten.
Roll each fish cake in the breadcrumbs until well coated and place on a baking sheet on a baking tray.
Lightly spray with oil and bake for 20 minutes at Gas Mark 6 or 200°, turning once.
We enjoyed our fish cakes with a colourful salad.
