St Patrick’s Day Brownie Bites

St Patrick’s Day Brownie Bites recipe from the gingerbread house

It’s not long until we celebrate St Patrick’s Day. I’ve been trying to think of small ways to celebrate at home and came up with some delicious St Patrick’s Day Brownie Bites. I’m all in favour of a quick bake so used a shop bought packet mix as the base of these. You can make them in a mini muffin pan or in a brownie tray and cut them into small bites. Ingredients to make St Patrick’s Day Brownie Bites:

1 (18.3 ounce) package brownie mix (or your favourite brownies recipe)

1 cup green candy melts

Green sugar sprinkles

Airheads Extreme Minis

Rolos Caramel Candies

How to make St Patrick’s Day Brownie Bites:

Preheat oven to 350 degrees. Prepare a mini muffin pan with mini cupcake liners and spritz with non-stick cooking spray.

Mix the brownie batter according to the package directions.

Using a small scoop, pour approximately 1 tablespoon of batter into each mini muffin cup. Bake for 10 to 12 minutes or until a toothpick inserted in the centre comes out with moist crumbs attached.

Cool brownie bites completely.

Melt candy melts according to package directions. If the candy overheats or is too thick, add 1 teaspoon of coconut oil or vegetable shortening.

Pour the melted candy into a zip-tip freezer bag, snip one corner and drizzle over the brownie bites. Immediately sprinkle with coloured sugar. Press one wrapped Rolo candy into each brownie and place one Airhead Extreme Mini candy next to the Rolo.

Allow your St Patrick’s Day Brownie Bites to set completely before packaging or serving.
