Easy Slimming World mince pies

I’ve been following Slimming World for a couple of months now. I’ve followed Slimming World before and it works really well for me, if I stay on plan. When I signed up to a plan I received an eat, plan and be merry book which I found really useful over Christmas. It’s a time of year with lots of lovely food and opportunities to be social which makes it easy to eat more than you need to. I really wanted to try some of the seasonal recipes which had be adapted to be Slimming World friendly, especially the mince pie recipe which is something I always associate with Christmas. This easy Slimming World mince pies recipe turned out really well and is so low in syns that you can indulge in a couple and not miss out!

Slimming World mince pie ingredients

225g plain flour

110g low fat spread

cold water

salt

mincemeat

Frylite or similar low-calorie cooking spray

icing sugar to dust

How to make Slimming World mince pies

I never make my own pastry but you will need to for this recipe! Sift the flour, add a pinch of salt and rub in the low-fat spread with your fingertips. Add a little cold water until the mixture comes together into a ball. Roll into a ball, wrap in clingfilm and leave to chill in the fridge for 30 minutes.

Preheat your oven to 190 and lightly spray your bun tin with low-calorie cooking spray.

Roll out your pastry and cut out your rounds using a 7.5 cm fluted cutter – yes these mince pies are bite-sized! Place any left over pastry to one side to make the stars for the top. Place each round into the bun tin and lightly press them down.

Fill each one with a teaspoon of mincemeat. Roll out the leftover pastry and use a star shaped cutter to cut the same number of stars, one for each mince pie. We found our recipe made about 30 mince pies.

Slimming World mince pies

Place each star onto the mince pies and bake for 15 minutes or until the top of the pastry has turned golden brown.

Leave to cool slightly then remove from the bun tin and place on a wire tray to cool completely.

You can sprinkle icing sugar over the mince pies before serving.

    My sister is doing slimming world so this would be perfect for her as she likes to cook new things!
