Simple Eton mess

Did you know that tomorrow is National Ice Cream Day?  The weather has been bright and sunny today so we enjoyed ice creams when we were out for a walk. After dinner we made some delicious Eton Mess desserts with Kelly’s of Cornwall ice cream and Clark’s delicious dessert toppings.

Eton mess is a well known English dessert consisting of strawberries, pieces of meringue, and cream, traditionally served at Eton College’s annual cricket game against Harrow School. It is one of my favourite Summer desserts so we made our own version today.

Ingredients needed to make Eton Mess:
Punnet of fresh strawberries
Kelly’s of Cornwall Clotted Cream & Honeycomb ice cream
Clark’s Sophisticated Strawberry sauce
Meringue nests

How to make Eton Mess:

First wash the strawberries, lightly dry with a paper towel and hull the green cap and stem. Cut into quarters.

Break one meringue nest into smaller pieces and add half into a sundae dish.  Place a couple of scoops of the Kelly’s of Cornwall Clotted Cream & Honeycomb ice cream into the dish and sprinkle the strawberry pieces.

Add more pieces of meringue and finish off with the Clark’s Sophisticated Strawberry sauce.
