Queen cakes for Mother’s Day

Are you doing anything special for Mothers’ Day this year? We’re hoping to visit our local Farmers’ Market before enjoying a family lunch at the local pub. I thought I would make something special for afternoon tea using Whitworths baking sugars – traditional Queen Cakes.

The recipe for Queen Cakes is quite simple. You will need:

110g  unsalted butter
110g caster sugar
2 eggs
110g self raising flour
60g glacé cherries

Cream the butter and sugar in a mixing bowl, add in the eggs, then fold in the flour. Add a little milk if necessary. I added chopped glacé cherries but you can also use sultanas if you prefer.

Grease a heart-shaped tin, or bun tin, then add the mixture being careful not to overfill each shape. Bake at 180° for 15-20 minutes until golden brown, then leave to cool and transfer to a wire rack. Lightly dust with caster sugar before eating. Delicious!

Once again Whitworths are running some brilliant competitions during March. To enter you must be following @WhitworthsSugar on Twitter. Each week @WhitworthsSugar will ask their Twitter fans a different baking related question, all you have to do to enter is tweet your answer with the well-themed hash tag:

Week 1- (2nd – 8th March) What are you planning to bake for Mother’s Day? Use the hash tag #MothersDayBakes

Week 2 – (9th – 15th March) What is/was the best baking tip your Mum shared with you? Use the hash tag #MumKnowsBest

Week 3 – (16th – 22nd March) What is/was the best recipe their Mum passed down to you? Use the hash tag #MumsTheWord

… and to mix things up, in the fourth week they’ll be asking you:

Week 4 – (23rd – 28th March) What will you be baking for the family this Easter? Use the hash tag #EasterBakes

Each Friday one lucky person will be chosen at random to win a Whitworths goody bag (3 in total), this winner will be chosen from the previous week’s entries, the requirements are that:

  1. You are following @WhitworthsSugar
  2. You have used the correct hash tag for that week (see above).
