Pumpkin Spice Coffee Cake

It’s that time of year when I really need a slice of cake, especially if I’m watching Bake Off! Tuesday evenings are definitely the time for cake and the whole family love my Pumpkin Spice Coffee Cake with special Streusel topping.

Pumpkin Spice Coffee Cake

With our delicious Pumpkin Spice Coffee cake you can make a simple streusel topping which really finishes the cake off.

Streusel ingredients
2 Cups of flour
1 ⅓ Cup of sugar
2 tsp ground cinnamon
1 ½ Cup of unsalted sweet cream butter, melted

How to make Streusel topping:

Preheat the oven to 180° and spray a 9″ springform pan. Line the bottom with parchment paper and spray with baking spray.

Using a medium bowl, whisk together the dry ingredients until combined

Using a fork, mix in the melted butter until fine and crumbly. Set to one side.

Pumpkin Spice Coffee cake ingredients
3 Cups of flour
2 tbsp pumpkin pie spice
1 ½ tsp baking soda
1 tsp baking powder
½ tsp kosher salt
¾ Cups of unsalted sweet cream butter, softened
2 Cups of sugar
3 large eggs
1 tbsp pure vanilla extract
½ Cup of pumpkin puree
⅓ Cup of sour cream
1 Cup of whole milk

How to make Pumpkin Spice Coffee cake

Using a large bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time until combined

Beat in the vanilla, pumpkin and sour cream until combined

Using a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, baking powder and salt

Alternate and gradually mix in the butter and milk until combined and smooth

Pour the batter into the springform pan and sprinkle the streusel crumble on top in a even layer

Bake in the oven for 40-50 minutes or until a toothpick comes out clean

Easy Pumpkin Spice Coffee Cake

Serve the Pumpkin Spice Coffee cake warm or cooled with a pumpkin spice latte.
