Is anyone else still enjoying Christmas food? We have so many Christmas chocolates, treats and bottles of mulled wine. It was a bit strange drinking mulled wine in January but I don’t see why it should only be drunk at Christmas. I set a little mulled wine aside to make a batch of mulled wine chocolate brownies. We love brownies and I thought this was a fun twist on a brownie recipe.
This isn’t my recipe. I’m not sure where the original recipe is from as I found it in a pile of recipes I’d ripped out of magazines.
Mulled wine chocolate brownie ingredients:
225g dark chocolate
100g unsalted butter
4 eggs
225g icing sugar
6 tbsps mulled wine
4 tbsp flaked almonds
Easy mulled wine chocolate brownie recipe
Pre-heat your fan oven to 170°, line and grease a brownie tin (mine measures 16cm square).
Melt the chocolate and butter in a bain-marie. I didn’t have enough dark chocolate so used a combination of dark and milk chocolate. Set aside to cool down.
Separate the eggs, placing the egg whites in a ceramic bowl. Set aside the egg yolks for a little later. Whisk the egg whites until they are stiff and fluffy.
Take the egg yolks and add the icing sugar. Stir in the mulled wine.
Next, add the melted chocolate and butter to the egg yolks. Then gradually fold the egg whites in.
Pour your brownie batter into the prepared baking tin and sprinkle with the flaked almonds.
Bake your mulled wine chocolate brownies in the oven for 40 minutes. Remove from the oven and leave to cool before cutting into squares and removing from the baking tin.
This is such a divine recipe. Our family love freshly baked brownies and this recipe was a huge hit. I can’t wait to make it again soon.
