Mint chocolate cupcakes

I just adore the taste of mint chocolate ice cream and wondered if this could be translated to cupcakes!? Yes, it can! Here’s a simple but tasty recipe for 12 mint choc cupcakes.

Ingredients:

  • 225g self raising flour
  • 4 tbsp cocoa powder
  • 1 tsp baking powder
  • 225g caster sugar
  • 225g unsalted butter
  • 4 eggs
  • 1 tsp mint essence
  • 100g chocolate chips

Method:

Preheat oven to 160.

Sieve the flour, cocoa and baking powder in a bowl. In a separate bowl beat the sugar and butter, then add the eggs.ย  Add the dry mixture to the bowl with the mint essence and chocolate chips. Bake for 20 minutes. Remove from the oven and leave to cool.

Icing:

  • 115g unsalted butter
  • 225g icing sugar
  • 1 tsp mint essence
  • green food colouring
  • chocolate chips to decorate

Method:

Beat the sugar and butter until smooth, add the mint essence and a tiny splash of green colouring (enough to turn the icing minty green). Ice each cupcake and decorate. Share and eat ๐Ÿ™‚

    Hello! I found this recipe through google as I would to bake these for my brother’s birthday. In the method you mention beating the butter and sugar for the cake mixture but you haven’t listed how much and what kind of sugar you need for the cake mixture? I would like to bake these on Wednesday so if you could let me know asap, it would be much appreciated!

    Hi Helen!

    As promised, feedback on the cupcakes!

    First of all, I actually made 18 cupcakes from that mixture as there was a lot! Which as perfect because I intended to make 24 to have enough to write letters.

    It turns out writing with icing is tricky, hence they look a little less than perfect!
