Halloween roasted vegetables {A-Z Play at Home}

I love Fridays. We have a fun weekend planned with the kids. Can you believe we’ve already reached letter V in our weekly A-Z Play at Home blog hop? The letter V made me think of vegetables, something we always have plenty of at home. We’ve used vegetables in our crafting before and today we wanted to try something a bit different. With Halloween coming up soon we made our own Halloween roasted vegetables!

I don’t usually have a problem getting my kids to eat their veggies. Thankfully they eat well, but it can never hurt to make mealtime a little more interesting. It definitely helps if they get involved with the food preparation too.

To make our Halloween roasted vegetables we used butternut squash and huge baking potatoes. My 7 year old prepared the potatoes whilst I peeled and sliced the butternut squash.

We picked a few of our favourite Halloween cookie cutters and my 5 year old used these to cut out the shapes from each slice of butternut squash and potato. Yes, I removed the knives as soon as I noticed them in this pic!

She cut out a few haunted houses, ghosts and pumpkins.

Then she placed them on a baking sheet and we sprayed them with cooking spray. We baked them in the oven for about 40 minutes at 180°C. They make a great accompaniment to the kids favourite dinner. I think we’ll be making these again next month!
