Granola cookies for Mother’s Day

If you’re a regular reader of my blog you’ll know that I love to bake and cook from scratch, as a stay at home mum I feel like I should! I love trying new ideas and was recently sent a recipe for some delicious sounding granola cookies made with Jordans Super Nutty Granola. I made these yesterday whilst my children were eating their dinner, they took 10 minutes to put together and 14 minutes in the oven (Gas Mark 4).

They’re so quick and easy they’d make a great treat for someone special if you’re celebrating Mother’s Day or any day.

Ingredients:

50g Jordans Super Nutty Granola
100g plain flour
2 level teaspoons baking powder
75g light muscovado sugar
75g butter
3 tablespoons golden syrup
75g white chocolate (for decorating)

Method:

Preheat the oven to Gas Mark 4 or 180°C. Line a large baking sheet with baking paper.

In a large bowl, mix together the flour, baking powder, sugar and the Jordans Super Nutty Granola (remember to break up any large clusters with your finger tips!)

Melt the butter and golden syrup together in a saucepan over a low heat, taking care that the mixture doesn’t get too hot. Pour into the dry ingredients and mix well.

Shape the mixture into 9 balls and place on the baking sheet, leave space to allow for them to spread.

Bake for 12-14 minutes until golden brown. Cool for 10 minutes and then transfer to a wire rack to cool completely.

Optional – melt the chocolate in a heatproof bowl, positioned over a saucepan of simmering water. Drizzle the chocolate over the cookies with a teaspoon. Serve when the chocolate has set.

    We just bought some granola so I have to try making these and perhaps my son would help. Love making cookies and biscuits. I’m a stay at home mum too and enjoy baking, every week I have a go at something new.

    ….hope I’ve not just duplicated this as I got an error message but I just said how I could try these after buying some granola this week. I’m also a stay at home mum and enjoy baking. I like trying new recipes out whether it be cookies or pies. I’ll definitely give these a go.
