It’s the time of year that was just made for baking! You all know that I named my blog after my favourite winter treat and I’ve featured lots of gingerbread recipes since I started blogging. We’ve baked gingerbread people, gingerbread houses, and tried all kinds of sweet treats from gingerbread (house) bread and butter pudding to gingerbread brownies. Today I wanted to share a sweet Finnish gingerbread recipe to make gingerbread bites. These bite-sized mouthfuls are a great after school treat, but can also be whipped up if you are visiting family and friends over the winter holiday.
Our Finnish Gingerbread Bites can be whipped up in under an hour. They take 10 minutes to prepare and cook in just 15 minutes.

Makes: 30
Finnish Gingerbread ingredients:
2 cups dark brown sugar
1 cup molasses
2 teaspoons ground ginger
3 teaspoons cinnamon
2 teaspoons clove
1½ sticks of butter
1 egg
2 teaspoons baking soda
3 cups of flour
1 tablespoon olive oil
optional – sprinkles for topping
How to make Finnish Gingerbread:
Oil a 9″x9″ baking tray and set to one side. Preheat your oven to 425°F or 200°C.
Mix the molasses, dark brown sugar, and spices (ginger, cinnamon, clove) in the bowl of a mixer with paddle attachment.
Add in the butter and mix for about 1 minute. Add in the flour and baking soda and while mixing, add one egg.
Press the gingerbread dough into the pan by hand, making sure it is even.
Bake for 15 to 17 minutes, until a toothpick comes out clean. Top with sprinkles and cut into small bite-sized pieces to serve or gift.
