Did you know British Egg Week takes place between the 5-11 October? This year I’ve been a 2015 British Lion eggs ‘Shortcut Eggsperts’ and my latest challenge was to create a classic egg recipe with a twist.
It has been 60 years since the famous TV adverts featuring Tony Hancock told us to “go to work on an egg”. Eggs are a staple of our family diet, they can be used in so many meals and are great value – just make sure sure they bear the British Lion stamp. British Lion Eggs have a great website packed full of information and great recipes. You can find recipes for breakfast, lunch and dinner as well as desserts, cakes and bakes.
British Lion Eggs have been revamping some classic recipes and giving them a modern 2015 twist, ranging from a falafel Scotch Egg to Spanish Eggs Benedict and a ‘Super Green Omelette’.
We love eggs in their simplest form, I happen to think they taste pretty good on their own, perhaps with some bread and tomato sauce. I was thinking about the challenge and decided to cook the egg as I like it, fried. And as it was the weekend we decided the whole family could enjoy a fried egg for breakfast.
As it was a cold Autumnal morning we added a toasted muffin, homemade rosti, and sliced sausages topped with a fried egg. There’s my twist, a good old English breakfast stack.
It was a pretty delicious way to start the day and gave us some great energy for a morning spent at the park.
