We’ve been baking a lot lately. The whole family love gingerbread and there’s nothing better than some Saturday morning baking, especially if the cookies last all weekend! I really enjoyed making some chewy gingerbread molasses cookies. These make the perfect cookie to go with a hot drink after a long, bracing walk with the family.
This recipe makes 24 cookies Chewy Gingerbread molasses cookies ingredients:
3/4 Cup unsalted sweet cream butter, softened
1 Cup light brown sugar
1 large egg
1/4 Cup molasses
2 Cup flour
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground ginger
1 tsp baking soda
1/2 Cup sugar
2 tsp ground cinnamon
How to bake Chewy Gingerbread molasses cookies
Using a standing mixer, beat together the butter and sugar until light and creamy. Add the egg and molasses and continue beating until well combined.
Using a large bowl, shift together the flour, salt, cinnamon, cloves, ginger and baking soda
Gradually beat until combined the dry ingredients into the wet
Cover dough with plastic wrap and place into the fridge overnight. When you are ready to make your chewy Gingerbread molasses cookies take out the dough from the fridge and preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
Pour the 1/2 cup of sugar and 2 tsp of cinnamon into a bowl and whisk together.
Using a small ice cream scooper, scoop out some of the gingerbread molasses dough and roll into a ball. Then roll the cookie dough ball into the sugar mix.
Place the cookie dough ball onto the baking sheet and repeat this step for the remaining cookie dough. Gently flatten each dough ball with the heel of your hand.
Bake your gingerbread molasses cookies in the oven for 10-12 minutes until golden brown.
I’m such a huge fan of gingerbread men, I love making them with my Mum while I’m at home – it’s like our little tradition! These cookies look like they take gingerbread to the next level – I love a soft and chewy biscuit and these sound perfect!
Ooh these look good, ive only ever attempted Gingerbread once and well it didn’t go that well, I could have actually built a proper house with it, it was that hard lol
