I’ve been self-employed for the last few years, juggling my blog around when my children are at school. I would love to say I’m organised, managing my workload alongside family life with no hiccups, but I can’t. Last week was good. I love a Bank Holiday Monday and we decided to visit Buckinghamshire Railway Centre and Waddesdon Manor.Buckinghamshire Railway Centre was huge and although the weather wasn’t great we all enjoyed riding on the trains. If you’re a mum of small people, or perhaps married to a Lego nerd, then you may have a house full of Lego minifigs. My 5 year old demanded we bake some cakes this weekend and she knew just what she wanted to make – Paw Patrol inspired cupcakes. What a difference a week makes. A week ago we stood on top of West Kennet Long Barrow in Wiltshire and enjoyed the Bank Holiday. The next day the children went back to school and I missed them and felt a bit lost at home on my own. It’s funny how quickly you get used to being surrounded by people. My children love baking. I’m keen to encourage them in the kitchen but a kitchen full of cakes is not helpful when you’re following Slimming World! Anyway, my daughter has been asking to bake something for ages so we made a yummy batch of Fingerprint cookies. Simple fingerprint cookies These are really quick and simple but fun too!
