Tunnocks Caramel Wafer chocolate cupcakes

January tends to be a quiet month for us. After the crazy, busy months of November and December it’s good to keep our weekends free to enjoy each others’ company and our own home. It was noticeably colder today, which is why it seemed like a really good time to experiment in the kitchen.

Many moons ago when I was at University, I was a member of the Tunnocks’ Caramel Wafer Appreciation Society. Every week we would gather in the pub, I can’t quite remember what we did, but I made some great friends and went on a trip to the Tunnocks’ factory in Scotland! Happy days. And, needless to say, my love of Tunnocks Caramel Wafers has remained with me. So on a recent shopping trip I picked up a pack of Caramel Wafers, enjoyed a few with my elevenses and had a thought about baking with them.

I made chocolate cupcakes, placed a small amount of the batter in the bottom of each cupcake cake, then added a slice of Tunnocks’ Caramel Wafer. I cut each bar into four pieces which seemed about the right size for each case. I filled the rest of the case with more chocolate cake batter, then baked them in the oven as usual.

I left the cupcakes to cool, decorated them with chocolate icing and sprinkles. I couldn’t wait to try them!

Fortunatley they tasted really delicious. The layers of chocolate and caramel melted whilst baking and left a delicious piece of wafer/chocolate/caramel goodness inside the chocolate cake.

I was bad and told the children they contained coffee – more for me to enjoy!

  1. I’ve never been a fan of them – always tasted a bit stale to me, but my dad is obsessed with them. I do like the idea of them being in a cupcake though – that sounds like something I would like. Love the fact you were in an appreciation society – that’s brilliant!
