It’s no secret I have a love of gingerbread. Biscuits or cake, I’m not fussy as long as it’s delicious. We were recently sent some gingerbread biscuits from Bee’s Bakery to try. They arrived beautifully packaged, carefully wrapped in paper, tied up with string.
The first thing that struck me was the delicious smell followed by the unusual design of the biscuits. These are not just any biscuits – but an updated version of the jammie dodger – two delicious gingerbread biscuits sandwiched with a creamy filling. The top of each biscuit feature words or faces which you can customise too.
The whole family enjoyed the biscuits which had a nice crunch, delicious gingery smell, smooth filling and plenty of rich flavour. I asked Bee a couple of questions about her business.
What’s the idea behind Bee’s Bakery?
We got bored of cupcakes, so we make awesome biscuits instead. Often, biscuits are a bit better for you than cupcakes, and we find them more exciting too…
When did you start your business?
I got ‘into’ baking properly about 3 or 4 years ago when I did some work experience with Peggy Porschen. I was baking early mornings and late evenings from home, trading at markets in London at the weekends from an Italian 3 wheeled van, alongside working for a top PR firm, specialising in pharmaceuticals. I’m an ex scientist you see!
I see you’ve already been featured in Grazia, the Telegraph’s Stella magazine and Timeout London. How did these come about?
I just did a little bit of basic PR, wrote a press release about the biscuits, got some brilliant photography done and went from there.
I love the idea of an updated ‘jammie dodger’, how did you come up with this concept?
I wanted to focus on biscuits, much more interesting than cupcakes, and I just played around with recipes lots, and stumbled across these brilliant little alphabet cutters…I first did this chocolate with the words “its only a bloody chocolate cake” written on the top – and people seemed to love it.
I also love the tag line on your blog – home baking with real bite! Do your biscuits have any secret ingredients?
Good question! No secret ingredient, but I do love trying things that are different, and have been known to put a rude word on the top of a biscuit before!
Have you always loved home baking?
Absolutely! I remember that when I was little, growing up in the north east of Scotland, near Inverness, where it’s so cold that we used to put the oven on (often with a cake / biscuits in it) to keep warm.
