Mincemeat and marzipan loaf {a brilliant way to use up mincemeat}

We can’t be the only family who still has a freezer full of leftovers after Christmas. Yep, we still have some homemade sausage rolls and mince pies in the freezer! Not to mention all the boxes of chocolates… Every time I open the fridge I saw a massive jar of mincemeat which I was meaning to use up. We didn’t need any more mince pies but I knew it would go really well in a cake. Today I’m sharing my mincemeat and marzipan recipe which is perfect for using up leftover mincemeat.

Mincemeat and marzipan loaf ingredients:
8ozs Self Raising flour
4ozs Butter
3ozs Light Muscovado Sugar
3ozs Golden Marzipan
2 x Large eggs
10ozs Mincemeat
2tbs Flaked Almonds

How to make Mincemeat and Marzipan loaf:

Pre-heat the oven to 180°C/350°F. Cut the butter and marzipan into small pieces. Butter and line a loaf tin.

Sift the flour into a bowl. Add the butter and rub into the flour using your finger tips until the mixture resembles breadcrumbs. Stir in the sugar and marzipan pieces.

In a separate bowl mix the eggs and mincemeat. Add this to the flour mixture and stir until everything is combined. Spoon into the loaf tin and cover with the flaked almonds. Bake for 50 minutes. Remove from the oven and lightly sprinkle with icing sugar.

This is a delicious cake as the marzipan melts a little which is delicious. It’s also a great recipe for using up leftover mincemeat – although it didn’t use up all our leftovers! Mincemeat Palmiers coming up soon!

  1. I adore mincemeat, at Christmas, I’m constantly eating Mince pies, this sounds and looks delicious, must show my mum she is the baker x

  2. perfect, I have leftovers of both! Any chance of a print-friendly version for any more recipes? Pretty please?? (Am I the only un-tech-savvy person left who actually prints recipes??)
