Tesco 60-Minute Roast Challenge

It’s not often I take my laptop into the kitchen but I had a good excuse as I wanted to try some new recipes. Autumn makes me want to cook more traditional meals and we all enjoy a traditional Sunday Roast Dinner.

We were invited to take up the ’Tesco 60-Minute Roast Challenge’ – creating a delicious traditional Sunday roast in under an hour. I love cooking and often cook a roast but it’s something I like to take my time with. I admit I was a little nervous about preparing and cooking everything in an hour but I tried my best!

I spent a happy hour looking online at Tesco’s dedicated roasts web page and decided to try something a little different – one of the easy roast recipes, baked chicken thighs with butternut squash and goat’s cheese, as well as a roast side dish, sweet and sour red cabbage with apple. This sounded like a winning combination.

Tesco 60-Minute Roast Challenge

We’ve been so busy lately I decided to cook a mid-week roast so yesterday I sourced all the supplies I needed from my local Tesco’s. After I had collected the children from school I set to work: peeling, zesting and crushing until everything was ready.

I love a one-pan meal and the baked chicken thighs with butternut squash and goat’s cheese came together really easily. I was able to place the chicken thighs and butternut squash in a roasting dish and leave them to cook for 45 minutes. Just before serving I added the goat’s cheese, which melted on the hot food and tasted amazing.

I added a side dish of sweet and sour red cabbage with apple. I love red cabbage but admit that I don’t cook it very often and perhaps I need a little more practice. After preparing the vegetables I placed them in another roasting dish, and cooked them according to the recipe. I’m not sure what happened but unfortunately the cabbage was a little crunchy which meant my darling children refused to eat it.

I enjoyed cooking a mid-week roast and trying some new recipes. I surprised myself that I was able to cook a roast in 60 minutes and have bookmarked lots of other delicious sounding recipes to try over the coming weeks.

    I always spend hours cooking a roast. What a mug I am. lol
    This looks and sounds amazing….I think I may have to give it a try x

    I have to admit I often put off by how long it takes to make a roast, this sounds absolutely delicious though and in such a short time. x

    I adore goats cheese, so do my children so this dish would have gone down very well in our house.
