Getting ready for Pancake Day

Are you excited about Pancake Day next week? We are! It has to be one of my favourite childhood memories – the anticipation, the smell and sounds of the cooking and of course, the yummy flavours. I think Pancake Day remains special because although pancakes are simple, cheap and quick to make, we usually only eat them once a year.

Our 2 and 3 year old need a little help to appreciate the finer things in life. Which is why we had a practice run for Pancake Day or Shrove Tuesday as it’s traditionally known.

You really don’t need many ingredients to make pancakes the way we love them:

100g plain flour
2 large eggs
300ml milk
lemon
granulated sugar

In a large bowl combine the flour, eggs and milk and whisk until smooth. We used our gorgeous Mason Cash bowl (we have a fun green version which features a hedgehog and leaf pattern).

We like our pancakes side-plate size so used an Infinity copper frying pan, it features a contrasting copper base to regulate the distribution of heat which makes it perfect for evenly cooked pancakes. Heat your saucepan with a small amount of oil and then wipe any excess oil with paper towel and ladle in your pancake batter. Watch it turn a lovely golden brown before flipping it over and cooking the other side. When both sides are cooked through gently slide your pancake on to a plate.

We love our pancakes with fresh lemon juice and granulated sugar. My children loved getting to grips with this Beechwood lemon juicer and my 3 year old now wants to make his own fruit juice with every piece of fruit he can find.

Sorry for the poor photo but I had to share this one of my 2 year trying lemon for the first time! Her expression is priceless but she quickly got over the taste and went on to enjoy several pancakes 🙂

    When I was younger (as an adult) I only made pancakes on pancake day and they’d often be lumpy and I’d regret it so my fondest memories are childhood ones, but a year or two ago I discovered that if I chuck all of the ingredients in my Vitamix, I make perfect pancakes everytime, so now we have them about once a week nearly every week. My fav being just like your recipe – sugar and lemon (little sis is a picture with her lemon ha ha). When the nieces and nephew come round they all want something different so I have to load the dining table up with a jar of chocolate spread, and lemon, and sugar, and maple syrup.
    No matter how lovely I always go back to sugar and lemon. I think the flavours of that are just so comforting and nostalgic for me (like the Italians say “like Mamma used to make!”

    Great photo!!

    Growing up my family never really did pancake day, which is a real shame as I always wanted to celebrate it. So we try to make sure we celebrate it each year and hope to build up a tradition of some kind around it. I’ll never beat the massive pancakes that we bought in Russia from kiosks on street corners though… they had to be folded multiple times around the filling to be small enough to hold in your hand 🙂 And the combinations of pancake fillings we tried were great too!

    awww at the lemon face! with my eldest I craved lemons all through his pregnancy and he went on to really like them as a baby!

    I loved pancake day growing up. Dad would spend all evening cooking them as we kept demanding more.
