I was invited to take part in a baking challenge from Renshaw Baking who have over 100 years of baking and cake decorating expertise. The challenge was to create an original Royal Baby themed cake which I thought sounded quite fun.

Baby cakes (fit for a prince or princess)

We all love a Victoria sandwich and it’s a bit of a tea time classic so I made one following my favourite recipe. I wanted to use a 20cm square cake tin so first I weighed 4 eggs, then weighed out the same amount of butter, self raising flour and caster sugar. I mixed the butter and sugar together, before adding the eggs, a splash of vanilla essence and folding in the flour.

When the cake was baked and cooled down I covered it in Renshaw’s marzipan, using a layer of apricot jam to make sure it held in place. Then I covered it with Renshaw’s white ready to roll icing, held in place with cold boiled water.

As the challenge was to create an original Royal Baby themed cake I had to have a bit of a think. I also searched on Pinterest and saw loads of amazing creations. However I have to admit I’m not great with making figures out of icing so stuck to something simple but elegant, and also gender neutral!

I made a union flag from red and blue icing (from the new Renshaw Primary Colour Multipack). Then I added a small crown above the flag using the yellow icing from the same pack.
