It’s been a while since I shared a recipe on my blog. I started Slimming World a few months ago and haven’t really wanted the temptation that baking brings. However, last week I won a bottle of Gin and Tonic flavouring at the weekly raffle and it inspired some low fat baking.
The Gin and Tonic flavouring is from Sainsbury’s and there’s a Prosecco one too (which I also won). They are Syn free and a fun way to add some interest to food and drinks. I made some Gin and Tonic lollies with them as well as these Gin and Tonic cupcakes.
I adapted a recipe I found on the Slimming World recipe. I can’t believe I’ve never made their lemon drizzle fairy cakes before as the recipe is delicious.
Ingredients
1 lemon
2 eggs
50g low fat spread
100g Self Raising flour
6 tbsp artificial sweetener
A couple of drops of Gin and Tonic flavouring
How to make Gin and Tonic cupcakes
Zest the lemon, cut in half and squeeze the juice into a bowl. Set to one side.
Whisk together the eggs, low-fat spread, artificial sweetener and Gin & Tonic flavouring.
Sieve in the flour along with the lemon zest and half of the lemon juice.
Spoon the mixture into the cupcake cases, bake for 15 minutes at 180°C/160°C Fan/Gas 4.
Remove when cooked and leave to cool.
Make the lemon drizzle with some icing sugar and the remaining lemon juice. Drizzle over the cupcakes.
Each cupcake is 2.5 Syns each at Slimming World.
