For my birthday back in March I asked my husband to buy me Betty Crocker’s Gingerbread Cake & Cookie Mix. I’m not even sure where I saw it but I can’t resist gingerbread so had to have it. The best before date was today so I finally got round to baking it.
I really wish I hadn’t bothered! It was horrible 🙁
The mix makes gingerbread cake or cookie mix (naturally flavoured!) and I chose gingerbread cake. I don’t know what went wrong as it smelled delicious, but it didn’t bake properly. I served it with custard to try and disguise how heavy it was.
To make gingerbread cake you needed to add 1.25 cups of water which I converted to ml and made the mixture incredibly runny. I used a loaf tin, which I lined, and baked the mixture to the required time. Every time I checked to see if it was cooked all the way through the skewer came out with mixture on it. I’m sure there’s a technical reason for this but I just don’t know what was wrong – too much water? oven too hot/not hot enough? or wrong tin used?
My husband has banned me from buying any more packet mixes. Let’s see how long I can last.
