Easy Butternut Squash soup recipe
The Whitworths website has some great recipes and not all of them are cakey. As well as cakes, biscuits, and desserts there are also some savoury suggestions. I liked the look of the Butternut Squash soup recipe as it’s perfect for this time of year and we all enjoy soup.
1 large butternut squash
50g butter
1 small onion, finely chopped
1 small clove of garlic
1 litre of chicken or vegetable stock
1tbsp olive oil
salt and pepper to season
How to make easy Butternut Squash soup
The recipe was easy to follow and I learned a new way of preparing butternut squash. This recipe suggested cutting the squash into quarters, removing the pulp and seeds, then sprinkling Whitworths Light Soft Brown Sugar over the squash and adding a little butter over the top before baking. This made it really easy to remove the skin which I usually dislike doing.
The soup only took an hour and was easy to fit around the children’s dinner. It was delicious and the sugar gave it an interesting added flavour. Even better, the recipe made four portions so I was able to freeze the leftovers for another day.
