Wimbledon cupcakes - the gingerbread house

I’m quite looking forward to Wimbledon starting next week as for me that’s when summer starts. I was thinking how nice it would be to have some summery cupcakes to eat whilst watching the tennis and came up with these.

Easy Wimbledon cupcakes

For the cupcakes I tried Dr Oetker’s Shake it! Vanilla Fairy Cake Mix as I was baking with the toddler. The mix is fantastic as you simply add milk and shake. Easy peasy.

After the cakes had cooled I mixed up some royal icing. I seem to have mastered it so am now using it for everything! I took a small amount of the icing out and coloured the remaining yellow. I iced a circle around the edge of each cake and, when it had dried, flooded the inside with the icing.

When the yellow icing had dried I iced a small amount of plain white icing to make the top of each cake look like a tennis ball.

What do you think of my Wimbledon cupcakes? The perfect tennis-themed cakes for watching Wimbledon. Now we just need some sunshine.

    Love these. And, so that’s the way to ice cakes – do the outside, dry, then fill in. I might copy these for biscuit icing. #parentingpinit
