I thought I would make one for the Jubilee weekend although I chickened out of adding an iced union flag to the top of it! I used Wright’s Madeira Cake Mix as a base, adding water, vegetable oil, lemon juice, ground almonds, and red food colouring according to a recipe on their website.

I lined the cake tin according to the instructions on the website and poured in the cake mixture – one half plain, one with the red food colouring.

After the cake had cooked and cooled I cut it and put it together, and wrapped it in some yummy marzipan.

I love the taste of the cake, quite light but delicious. I’m not sure that using the cake mix saved any time but it was definitely convenient. Next time I’ll use more jam to make sure the cake sticks together really well and perhaps roll the marzipan thicker as after a day it split right down the middle!

    Gosh! That looks tasty! It never occurred to me I could make my own battenburg for some reason.
