In our house gingerbread is a treat all year round. There’s something about the smell and taste which I find very comforting. I’m always happy to mix up some dough and spend a happy afternoon cutting out shapes, I think gingerbread makes the best after school treat!

Ages ago I discovered Gingerbread Wonderland by Mima Sinclair. I’ve tried a few of the recipes and the light and dark gingerbread doughs are lovely. I used the light gingerbread dough to make Clangers and Iron Golem biscuits, both of which were a success.

The book contains many more ideas than two different doughs. There are 30 magical houses, biscuits and bakes. I think I will really need to up my game with this years’ gingerbread house!

  1. It would look like the gingerbread house from the story of Hansel and Gretal. It would have an iced roof and lots of candy stuck to the walls!

  2. My dream gingerbread house would look like a pretty Swiss chalet deep in winter snow (i.e. yummy icing!) with a biscuit evergreen tree nearby and a logpile (maybe of little chocolate flakes) arranged against one wall. Hmmm, now I’m craving gingerbread!

  3. An Amsterdam Town House as I love these buildings with rows of neat windows and the wonderful shaped roofs!

  4. Love something in the style of Saint Basil’s Cathedral, Moscow including having the domes with colored with different flavored icing.

  5. I’d like a traditional sort of look, but I’d like to make it a lot larger than standard and add a lot of other sweets to it to perfect the Hansel and Gretel look… candyfloss smoke from the chimney, a garden of edible delights… it would be amazing!

  6. One that stays together but doesn’t break your teeth when you eat it. My attempt at one this Christmas was terrible and never got eaten or even taken out of the box!

  7. A spanish villa with little blue iced shutters, Soft chewy sweets on the walls and most important of all a garden with iced flowers, food colouring essential as much as a creative flair. Makes me peckish just thinking about it!

  8. I’d love to be able to recreate a Gingerbread Windsor Castle to send to the Queen for her 90th birthday…might score an invite to share a bite with a cup of tea? 😉

  9. It would be filled with Christmas red and green buttercream. Topped off with royal icing snow, candy lights, and chocolate filled wafers that will make the roof of the house look like a log cabin.

  14. I have seen some amazing gingerbread houses online that have lights and are huge…. I would love to be able to make a mansion with porch, swing and even shutters on the windows.

  15. A small sloped roof, chocolate buttons as tiles, marshmallow snow, windows and doors are chocolate slabs. Surrounded by a marzipan forest. Mmm

  18. I was in Harrods a couple of years ago at christmas time and they had this gingerbread grotto that almost spanned half of the counter it was incredible .
