Honeycomb crunch

When Whitworths challenged me to use their lovely new sugars I wondered what I could make. Fortunately they have a handy section on their website which you can search by category or sugar type.

It’s probably no surprise I have a bit of a sweet tooth. I love honeycomb so was excited to see a recipe for it on Whitworth’s website.  I found it difficult to get the right consistency so I had a few attempts. Fortunatley you really don’t need many ingredients and it literally takes 5 minutes to heat and transfer to a tray to cool.

Using Whitworths granulated sugar I had all the ingredients (golden syrup, white wine vinegar, vanilla extract and bicarbonate of soda) so tried the recipe.

You heat all the ingredients, except the bicarbonate of soda, and let them dissolve, then simmer without stirring. Then add the bicarbonate of soda and whisk. This is the tricky part because you have to catch the mixture before it goes too dark. Then pour into a greased baking tray.

Allow to set before breaking into pieces.

I can’t believe it took me three attempts to perfect this recipe but it was worth it. I really love honeycomb and this is the perfect treat whilst watching a film on a cold night!
