This week I have been on a bit of a roll, making home-made tomato soup as well as apple and blackberry crumble, thanks to our trip to the Pick Your Own farm at the weekend. A couple of weeks ago I picked up some Stork Easy to Mix Baking Liquid at the supermarket. I love trying new products but it has sat in the fridge for a good few weeks, with me lacking baking inspiration. This week is National Cupcake Week however, the perfect time to fill the cake tin, which everyone enjoys in our house!
There are some handy recipes on the Stork website so the toddler helped me make Lemon cupcakes. I can’t even open the baking cupboard these days without my little helper shouting at me to get his footstool down. He even asked for his own baking spoon to mix with, clearly my wooden spoon was not good enough!
The recipe was simple, just substituting Stork Easy to Mix Baking Liquid for normal butter or margarine. It was strange pouring the Baking Liquid into the bowl of ingredients but it mixed incredibly quickly and easily. I never use a mixer but one wasn’t needed with the Baking Liquid!
After the cakes had baked and cooled they were decorated with lemon buttercream and an old-school lemon slice. We all enjoyed the taste of the cakes, which were incredibly light and fluffy too.
Stork Easy to Mix Baking Liquid is easy to mix, does not need softening and can be poured straight from the bottle to the mixing bowl. There’s a handy measuring guide down the side. Baking couldn’t get any easier!
I’m a firm believer in getting the kids to help with the cooking/baking – I get my 2 yr helping me do allsorts – yeah, it takes longer and is messier, but it’s more fun than having her tug at my legs complaining!
