Cooking a main meal in minutes with British Lion Eggs

I’m currently working with BritMums as a “Shortcut Eggspert” to promote yummy British Lion Eggs.  Sometimes it can be hard work providing the family with three meals a day and I frequently rely on eggs for cooking quick and tasty breakfasts, lunches and main meals!

I was set a challenge of cooking a main meal in minutes with British Lion Eggs. I’ve tried a couple of recipes over the last few weeks but our favourite has to be omelettes. Today we went to our first car boot sale of the year and we needed something substantial and quick when we returned from our early start. I made an omelette with cheese for the children and an omelette with chorizo for us. Both were cooked the same way.

You will need:

British Lion Eggs (I used 4 eggs for the children’s omelette and 6 for two adults)

Salt and pepper to season

Knob of butter

Grated cheese

100g Chorizo, sliced and fried for a couple of minutes

Method:

Melt the butter in the saucepan over a medium heat. Beat the eggs in a small dish and season before adding to the saucepan. Let the mixture cover the whole of the saucepan and leave to cook for a couple of minutes.

Add the grated cheese or sliced chorizo. Gently ease the omelette from the sides of the saucepan and then fold it in half. Leave to a cook for a couple more minutes before sliding on to a plate. We ate our omelettes with a side salad.

Omelettes are really easy to whip up and take less than 10 minutes so they’re perfect for a filling meal in a hurry. You can also add pretty much anything you find in the fridge, and hide vegetables in them too!

    This would be perfect for my other half! My son loves plain cheese omelettes but doesn’t really go much more adventurous than that! I’ll try to encourage him to try this though as it looks very tasty. Thank you for sharing!

    I LOVE omelettes, when i was pregnant with Harry i craved them all the time! Such a quick and easy meal for busy mums though! xxx

    We love omlettes! I tend to chuck everything in – ham, onion, cheese, sweet corn, sausage, mushroom, courgette…whatever is lurking in the fridge!

    Eggs are a staple in our house when I need to make something in a hurry. Chorizo omelette sounds yummy though – we make all kinds of omelettes but that one’s new on me. Will have to give it a whirl!

    We have chickens so we always have plenty of eggs. We too love omelettes, but my favourite has to be tortilla española 🙂 I love Spanish omelette and it always reminds me of my time living there. But it does take longer than a few minutes! x
