I love baking and despite following Slimming World I have no intention of giving it up. With two hungry children I love baking them treats for that after school period where they are absolutely ravenous. You all know by now that gingerbread is my absolute favourite thing to bake. Today I’m going to share my gingerbread pops which are cute and fun and easy!

Simple gingerbread recipe

350g Plain flour
1tsp Bicarbonate of soda
2 tsp Ground ginger
100g Butter
175g Light muscovado sugar
4 tbsp Golden syrup
1 Large egg
Ovenproof lolly sticks

Easy gingerbread biscuit pops

Make up your gingerbread dough following the instructions in my favourite gingerbread recipe. I like to leave my dough to chill in the fridge before cutting it out, and sometimes I’ve been known to place the baking tray in the freezer for 5 minutes before baking. This really helps ensure they don’t spread when baking.

Roll and cut out your gingerbread biscuits. I used a round cutter and cut out about 20 biscuits. Before they go in the oven you need to push the overproof lolly sticks about a quarter of the way through each biscuit.

Easy gingerbread biscuit pops

Place in the pre-heated oven for 10-12 minutes at 190/gas mark 5. Cook until golden brown. When baked carefully remove from the oven and leave to cool on a wire rack.

My kids loved decorating these. I left a few out with some ready made icing pens for them to decorate as they liked.

    We made Gingerbread today and it’s always so much fun, never thought to make them into cake pops before though – love this idea
