Apple and Gingerbread crumble

I don’t often share my recipes with you but I recently made something which is definitely worth sharing. Winter is the perfect time for making tasty treats in the kitchen. Last Autumn I came away from my father in law with two huge bags of cooking apples. His garden is full of fruit trees but everything was falling and rotting on the ground. Sadly we could only fit two bags of fruit in our car (thanks to those pesky kids!) but we prepared the fruit and froze it to see us through the winter months.

We’ve had quite a few tasty apple pies but I wanted to try something different and made a delicious Apple and Gingerbread crumble. It was so delicious with custard and something I could eat every night!

I had already prepared my apples using a really clever gadget from Lakeland – an Apple Master Peeler and Corer. This does all the hard work for you by peeling, coring and slicing apples for you! Needless to say the children loved watching this and before you knew it we had gone through the two bags of apples.

Apple and Gingerbread crumble

I parboiled them, waited for them to cool before freezing them in smaller quantities. Then I can just pull out a bag when needed and de-frost. I sound so domesticated, don’t I?!

100g Plain Flour
75g Unsalted Butter
100g Demerara sugar
50g Rolled Oats
Gingerbread spices

Blend the flour and butter in a food blender until mixed. Add in the sugar and oats. Then stir through the gingerbread spices. I love the spices used to make gingerbread so used 4 tsps ground ginger, 2 tsps ground cinnamon, 1/2 tsp ground nutmeg and 1/4 tsp ground cloves. I mixed these together and added them to my crumble mixture.

I greased a pie dish and layered my partly cooked apple in the bottom. Then sprinkled the crumble mixture over the top. I baked this in the oven for about 30 minutes at 180°.

I served my Apple and Gingerbread crumble with warm custard and the two went really well together. The oats give the crumble a lovely crunch against the smooth apple. The perfect pudding to accompany a delicious Sunday roast.

    This looks absolutely delicious! I love gingerbread, so I made your recipe last Sunday for pudding. I have to say, it was a great hit in our family and now everyone wants me to make more! Thank you
